Cajun Cauliflower Rice

I love spicy food. It’s probably the only reason I was able to truly transition over to healthy meals in the beginning. I feel like you can give any dish better flavor when you add some heat to it. Let’s face it, cauliflower rice could always use more flavor.

I’m a big fan of the Aidells Sausages since they are all natural and most are Whole30 or Paleo compliant. They are also pre-cooked so there go again saving time on cooking dinner! This dish took me 10 minutes from start to finish. I know right?!?!? If you didn’t read that in a Monica Geller voice I’m going to be so sad for you. Even more so if you don’t know who Monica Geller is…

Ingredients:

  • 1 pack Aidells Cajun Style Andouille Sausage
  • 16 oz pack of frozen riced cauliflower (semi thawed)
  • 1/4 white onion, chopped
  • 1 small yellow bell pepper, chopped
  • 1/2 -1 tsp Cajun seasoning (start with 1/2 then add to your preferred level of heat)
  • Salt and pepper to taste
  • 1 tablespoon olive oil

How to prepare:

  1. Warm the olive oil on medium heat, using a medium sized pan
  2. Slice sausage in to quarter sized pieces
  3. Chop the onion and bell pepper, set aside
  4. Add the onion and bell pepper and cook for about 3 minutes
  5. Add in the sausage and begin to brown
  6. Once the sausage is almost completely browned, add in the cauliflower rice
  7. Add in spices and cook for an additional 5 minutes

This is a great recipe full of flavor but is also a great “base recipe”. So feel free to add shrimp or additional veggies to fit your mood. I know it will taste just as delicious!
