Chocolate Cherry Muffins

I’ve had a bag of cherries in my fridge, staring at me, telling me there’s no way I will eat them all before the turn. I had to get creative and show these cherries whose boss, otherwise the rest of the produce would get out of line.

This chocolate cherry muffin recipe is probably my favorite. The fresh cherries combined with chocolate is just what my soul needed. I’ve had these for breakfast alongside my coffee. I’ve eaten one as a post workout snack. The kids have gobbled them up so fast that I had to make another batch and hide some! Yes, I’m that mom. I will 100% hide tasty food from my children so I can enjoy it as well. Don’t judge me.

This recipe is a great way to win the war against cherries, curb your chocolate cravings and have yourself a sweet and savory treat without guilt!

Ingredients:

  • 2 Bananas, ripe
  • 1/3 cup Cacao powder
  • 3 Eggs
  • 1/3 cup Maple syrup
  • 1 1/2 cup Almond flour
  • 1/4 Coconut oil, melted
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 1/2 cup fresh cherries, pitted

How to prepare:

  1. Wash your cherries and begin removing the stems and pits. If you do not have a cherry pitting tool, use a stainless-steel straw like I did
  2. Grease a muffin pan and preheat oven to 350 degrees
  3. Using two separate bowls, mix all dry ingredients in the first
  4. In the second bowl, peel and mash the ripe bananas before adding all wet ingredients
  5. Combined wet and dry ingredients in one bowl and mix
  6. Once mixed, spoon in your fresh cherries to the muffin mixture
  7. Ladell or spoon in the mixture to the muffin pan.
  8. Place in the oven and bake for about 20 minutes
  9. Top with a fresh cherry and chocolate drizzle if desired (or if you’re feeling fancy)
